Veggie rice gratin

Veggie rice gratin

1 c uncooked white rice - cook normally in rice cooker
Pile of roasted veggies (for 2 layers worth)
2 tbsp olive oil
1 med onion halved and thinly sliced
3 garlic cloves minced
2 large eggs lightly beaten
1 tbsp frsh thyme chopped
1/2 c parmesan
Pan for baking
Preheat to 450
Heat oil and cook onions, garlic and 1/4 tsp salt. Cover and reduce to low cooking until limp and tender - about 15 to 20 mins, stirring occasionally. Combine onion mixture, rice, eggs, thyme, and half of parmesan, and 1/2 tbsp off oil, and fresh pepper. Oil a 2 quart baking dish. Spread 1/2 of rice mixture, then 1/2 veggies, other 1/2 rice then other 1/2 veggies. Sprinkle with remaining cheese and cook about 20 mins.
